Selecting The Perfect Mango – 3 Steps

The mango is the centerpiece of this fruity salad dressing recipe, so selecting a gorgeously juicy and sweet one is best. 

Press: When selecting, gently press on the mango; a ripe mango will give slightly under your touch. A medium ripe will be firmer; go for the juiciest!

Smell: Give the stem a sniff. The mango should smell sweet and aromatic. 

Color: the mango should have turned green to primarily yellow/orange.

Choosing Organic Ingredients Or Not

This can be a controversial topic. However, if you eat it raw and unpeeled, ensure it’s organic. I’ll be adding a complete guide to organic vs. conventional foods soon. Mango, orange, and citrus can all be peeled, so buying organic is less essential. 

Remember to wash your product regardless of choosing organic or conventional. Use a veggie wash or a small amount of dish soap. You want to wash off any pesticides still on the skin or leaves!

Storing The Fruity Salad Dressing

Once made, the dressing will last in a sealed container for one week in the fridge. A great dressing to meal-prep and enjoy on a variety of dishes. Brighten your taco Tuesday with a drizzle over buffalo cauliflower and avocados (drooling and the thought!)

Ingredients
  

  • 1/2 mango
  • ½ tsp cumin
  • ¼ tsp chili peppers
  • ½ cup cilantro
  • ¼ cup orange juice
  • 2 tbsp olive oil
  • salt + pepper (to taste)

Instructions
 

  • In a blender, combine all ingredients and pulse until well smooth. If the dressing is too thick add one tablespoon at a time of water until desired consistency is accomplished.
