Nadia Redel is certified in plant-based nutrition from Cornell University and Colin Campbell Center for Nutrition Studies.
She has over 20 years of knowledge and experience in vegetarian and plant-based diets. An accomplished freelance writer who has turned her passion for food into Crave Your Kitchen, a website featuring original plant-focused recipes and beloved dishes from all over the world.
When Nadia is not cooking she is living an active lifestyle surfing, free diving and documenting the natural world. Her vivacious lifestyle is made possible by the balance diet she consumes and her hungry to learn more while having fun.
A Message From Nadia
Hi, Thank you for being here! The recipes on Crave Your Kitchen are inspired by my journey and dedication to living a happy, wholesome, and well-nourished life.
As our modern world speeds ahead and we take advancements in food science, I resist and encourage us to slow down and take it back to the roots.
My love for food started early on. My mom loves to cook and cooks well ( like really well!). I always preferred my vegetables on the plate to roasted meats or sausages, and by the age of 8, I had announced I was going vegetarian. My mother’s reaction: “Then you cook for yourself.” What might seem like tough love sparked my dedication and interest in the kitchen.
Getting my hands dirty
I embraced having the freedom to make a mess, try new flavors, explore new ingredients, while stumbling through the process of learning to cook.
As an adult, I have become an explorer, who tangibly experiences food. I’m always hungry for knowledge. Wide-eyed, I enjoy seeing how other cultures transform food and quizzically studying restaurant menus when I adventure out. Each experience in and out of the kitchen makes me a better cook. I am excited to share these 20-plus years of knowledge with you!
Why focus on healthy eating?
I am a nerd, first and foremost. I love science, learning about how our bodies work, as well as the evolution of food. The key too feeling our best, maintaining a functional weight, and being happy is not complicated, and it all comes back to the food we eat!
here’s a my rant…
We are biological beings, and our food should come from the earth. We should take whole ingredients and process the food in the kitchen with our hands, knives, pans, and blenders. We should fuel ourselves with nutrients, vitamins, and minerals, not synthetic ingredients and chemicals!
It’s really that simple, and with that knowledge comes a world of wholesome flavor and food!
If it’s not fun, I don’t want to do it!
I want to eat delicious food every day. I want to be so fueled on powerful nutrients that I can spend the entire day laughing, surfing or swimming under monstrous waves ( yes, I love doing this lol). But my point is; if it’s not fun, I don’t want to do it! And the same goes for cooking.
