Ingredients And Swaps For Mango Salad

Arugula / Mixed Greens: This is where you can apply personal preference. I think this salad is best made with at least some peppery arugula. The bitter greens mingle well with the sweet, herbal dressing and rich feta. 

Mango: Make sure to use a fresh, ripened, juicy mango. The feel of the mango under your press should feel tender, and the fruit should smell sweet and fragrant. 

Vegan Feta: You can swap this ingredient for dairy feta if you are not following a vegan diet. 

Red Onion: Make sure to slice the onion thinly. If your onion is exceptionally pungent, you can reduce the amount at your discretion. Remember to embrace your gut feeling!

Avocado: Avocado makes this dish exceptional. The combination of juicy mango and rich avo leaves your body feeling satisfied and nourished. I would not recommend leaving them out!

The mango is the centerpiece of this fruity salad. From the dressing to the base, a well-selected mango will either make or break your salad experience. 

Here are a few tips to follow for success

Press: When selecting, gently press on the mango; a ripe mango will give slightly under your touch. A medium ripe will be firmer; go for the juiciest!

Smell: Give the stem a sniff. The mango should smell sweet and aromatic. 

Color: the mango should have turned green to primarily yellow/orange.

Inspiration For This Vegan Mango Salad

A few years ago, I was living in Hawaii on the beautiful island of Kauai. It was a magical time when long surf sessions bled into fun dinners with friends. A good friend of mine found a recipe for a mango salad that was refreshing and fun. 

It started to make its way to the dinner table frequently, making changes and adaptations each time. This final variation is my absolute favorite. 

The dressing is so delicious. It is often a staple in my fridge and enjoyed on various dishes, including delightful avocado toast!

Equipment

  • 1 large salad bowl

Ingredients
  

  • half mango cubed
  • 1 avocado cubed
  • 4 cups mixed greens and arugula
  • cup thin sliced red onion onion
  • ¼ cup crumbled vegan feta
  • ½ cup fruity mango dressing.

Instructions
 

  • In a large salad bowl, place mixed greens and layer sliced onion, cubed avocado, mango and crumbled feta. Finish with a generous drizzle of fruity mango dressing. Toss and serve!
