Squeeze jackfruit to remove excess broth. Then with fingers, shred jackfruit. If you find hard sections, use a knife to chop into small pieces.
In a large mixing bowl combine vegan cream cheese, diced sundried tomatoes, chopped kalamata olives, shredded jackfruit, vegan yogurt, vegan feta cheese and breadcrumbs. Once ingredients come together, cover and place in the refrigerator for 20 minutes to rest.
*Careful not to over mix, you want the feta to stay in chunks.
Heat a pan to medium heat and lightly coat with oil. Shape the mixture into four burgers, with your hands and place onto a heated pan. Cook each side for four minutes or until golden brown.Add your sliced red onion to the hot pan to grill for a few minutes while you get your bun assembled.
To assemble burgers, slather bun with pesto, fresh lettuce, burger, grilled red onion and a crumble of vega feta. Finish with a crack of fresh pepper and enjoy!
